your opinion on asparagus, please.  Reply with quote  

I need a vegetable to serve with homemade chicken tenders (not battered, just lightly dredged in seasoned matzoh meal and quick cooked in a tiny bit of safflower oil) and old fashioned potato salad as lunch for some elderly family members.

I found bunches of asparagus at their perfect peak, which is odd at this time of year. Now, I'll eat asparagus with almost anything, but I know others have differing thoughts.

Do you think cold steamed asparagus would go well with the above?
Should I make a vinegrette marinade as well or is that pushing it?

I love asparagus. If you like it I say make it. If you are worried about whether the guests at your gathering will like it or not make an additional generic vegetable like corn, carrots or peas. Then they have a choice. You'll find most will take both. As for the vinegarette, I would make it but maybe serve separately so your guests may chose if they would like it or not.

oh sorry, have you ever had pickled asparagus? Oh man! It's so awesome I got one in a ceaser once, LOVED it, bought a jar, ate them.

Our grocery used to sell it's own store brand of pickled asparagus in 6oz jars. I'm sure the packer hadn't intended that as a single serving, but you know…. Laughing

I even like canned asparagus.

I think Asparagus is an all purpose veggie. Roasting it is great too! The flavor is amazing.

I second the roasting. Bit of olive oil and sea salt...delish.

I can't comment, because I've never experienced asparagus cooked with cold steam.

Even so, I think I'd prefer warm asparagus.

You probably already had to make your dish, but Suetu posted a blueberry Vinaigrette that sounded devine. I like to marinate the asparagus and then toss them on the grill or a cast iron skillet for a few min. This way is even good after they have cooled.

I like asparagus lightly broiled/grilled. Brings out a bit of a nutty flavor.

For an interesting salad/side dish: Roast some peppers (red, yellow, orange) by slicing them and baking them ina hot oven. Cool them off. Grill some portabello mushroom caps and then slice them. Grill some asparagus and chill. Toss all together with olive oil infused with garlic and salt. To make it really easy, take all of those raw ingredients and put them in a foil oven bag. Add the olive oil and spices and throw the bag in the oven or on the top shelf in a grill. Cook it for about a half hour and serve. Tastes good at any temperature.

Can't you just make it with broccoli? Or maybe artichokes?

I'm sorry, no asparagus here. Nope, can't do it.

Never met an asparagus I liked. Can't stand the way eating it makes your pee turn kinda greenish and smell funny.

Ok, I'm probably not the one to ask in this particular case, as I'm not crazy about a lot of vegetables. But i really can't stand asparagus at all. I'll even take lima beans or brussells sprouts over asparagus, and I hate lima beans and brussells sprouts. Asparagus is just about my least favorite vegetable, followed closely by eggplant and okra.

C'mon Ginjg, can't we just have enchiladas instead? I've heard you make really good enchiladas! Very Happy

When you come to L.A. I'll make enchiladas. With enchiladas you get tossed salad, rice and, for dessert, my famous tapioca with shaved chocolate and fresh raspberries. No asaparagus allowed.

We'll even try to get the rest of the SoCal contingent in on the deal. Tarty, Travist, TheaterCrazyRedHead, CU, maybe we could even entice the San Diego contingent of Zevon, Zip and dougp to make the trek. I believe we have some desert dewellers we could lure as well. Any excuse for boardellonalia Wink

So set the date and I'll start cookin'

Oh, I served the cold asparagus with real homemade ranch dressing on the side. (no, not that msg ridden packet mix)

I like to put asparagus in a pan, drizzle with olive oil, squeeze lemon all over them, dust them with parmesan and pepper, and then bake for 20 minutes (less if the aparagus is skinny).

Mmm, I can just smell it baking. I will be trying this.

Suetu's recipe is delicious, but a little too exotic for the crowd I was feeding that afternoon.
