First
perfect Roast beef the lazy way -
let the beef rest to room temp while
preheating oven to 500 degrees - that's right 500.
cook the meat at 500 for 5 minutes a pound.
Turn off heat and
DO NOT open oven for 2 hours.
After 2 hours remove from oven and let rest for 20 minutes.
Voila - perfect medium rare roast beef

I put the frig temp meat in the cold oven and heated to 500, then followed the recipe. for a 2 pound tritip this worked perfectly. Pan juices were perfect too.

Second
Cranberry relish-
12 oz fresh cranberries
2 macintosh or granny smith apples - cored and peeled
1 whole seedless orange - just trim off the tiny stem end, keep the peel on -cut in eighths.
ginger or cinnamon - optional
1/2 c brown sugar or 1/3 c. honey

Grind it all together coarsely, chill at least 3 hours. great with poultry
or
as a topping for vanilla ice cream

Nice tip, Ginjg. I wonder if I'm brave enough to try that on the Prime Rib were having for dinner. I love simple stuff!

It's what the pro chefs do.
With a thick cut like prime rib, I'd definitely bring the meat to room temp first. but you'd have to commit religiously to not opening that oven door for the full 2 hours. Absolutely no peeking.

whats even more awsome? a terracotta roasting pan that's what. oh! or even a kosher salt paste rub! that's friggen amazing too!

take the left overs (ha!) slice it wafer thin, pile on a bun with horseradish sauce and now you're in Baltimore having a pit beef!
