PSSSSST, jsdonze, real key limes are yellow, and subsequently keylime pie is...yellow. Crazy I know, but true. They are easy to make if you have access to key limes or key lime juice. Take a graham cracker crust, either make one or go with premade-your choice, and crack an egg yolk into it, yok only, and wipe that around to cover the surface. Brown that crust off in the oven for 10 minutes @ 350. This will prebake the crust real quick. You need to because the filling bakes very fast. So for the filling use:

4 large or extra large egg yolks
1 14 ounce can sweetened condensed milk
1/2 cup fresh key lime juice (approximately 12 Key limes)

That's it. Work the yolks first, until they thicken a little, then add the condensed milk. Make sure it is well combined. Then add the juice, which will thin the mixture a tad. Don't over mix. Pour the filling into the prebaked pie shell and cook for 12 minutes @ 350.

To top, make some whip cream. If you use cool whip, I will hunt you down and destroy you. Just keep that in mind. Cool whip is a sure way to death. A slow painful death. Otherwise, enjoy!

Okay, is this one more like it? To my acute chagrin, I don't actually know anything about Key Lime pie, other than it sounds kind of interesting. I think I'll blame Google images for the green one. LOL

Yep, that's the real key lime pie & graham cracker crust-
goes great with cocoa (& it's ok if you wanna spray a little Cool Whip or Redi-Wip in your cup)... Wink

Ahhh, that's much better.

So about going over the top on the Cool Whip thing. If you like Cool Whip, well that's none of my business. You're entitled to eat as much whipped hydrogen and oil as you see fit. I just think everyone should whip their cream by hand, with a whisk. None of this electric mixer shit. I suppose ready whip is acceptable. If it has to be. Rolling Eyes Very Happy

I'm pretty sure that Cool Whip is made out of The Stuff, you know, that b grade horror film form the '80's? Starring none other than Michael Moriarty? Yeah, it think it's made out of that. If you haven't seen the film, you should, it's a hoot.
